The kids are back to school now and our schedules just got a little crazy, and dinner time can be a nightmare. Well for me anyway. Today I am sharing my go to recipe that the whole family loves and it take a whole 15-20 minutes.
This recipe is perfect for this time of year. Fall time is when I love to make soups. Who am I kidding I make this all year around? Walmart is the perfect place to run in and grab one of their Marketside effortless meals when you are in a hurry. These meals are easy to find. Walmart has signs throughout their store that will say effortless meals that make finding something for dinner quick and easy.
They have the rotisserie chicken and different salad options like potato and macaroni, and a Coke product altogether in a bundle. Which is normally what I go for because you can make different types of quick meals from one chicken.Walmart also just lowered their price on rotisserie chickens to $4.88 which is a great price. They also have ready to bake pizzas and different kinds of sandwiches. On busy night's these can be such a lifesaver. Today I am going to share my favorite way to use the Marketside rotisserie chicken.
What you need:
1 Rotisserie Chicken
2 Cans of Chicken Broth
1 Can White Hominy
1 Can Yellow Hominy
1 Large Onion
Jar of Salsa
Dice onion and tomatillos. And Sautee for 5 minutes.
De-bone chicken, and cut up into chunks.
Add salsa, chicken, broth, and drained hominy. Simmer for 15-20 minutes. Honestly, just however long you have will be just fine.
We like to top our soup with cheese, sour cream or greek yogurt, and tortilla strip chips.
Enjoy this quick and effortless meal in 20 minutes. The kids will love it too. And any meal paired with a Diet Coke is a winner in my book.
