Cream Cheese Spice Cake Cups

I AM NOT a food blogger nor do I ever want to be. I do not like to cook or bake. My poor family, but sometimes I like to make a QUICK treat. I make these every fall. I got this recipe years ago from a Pampered Chef Holiday Cook book. I don't even know where the book is anymore, but I have this memorized so it must mean its a good one :)

 For the cake cups:

1 Box of Yellow Cake mix
2 eggs
1 1/2 tsp of Ground Allspice
4 TBLS of Oil
A shredded carrot
nut (optional)

Mix all together. This batter will be VERY thick, so don't be worried.

Bake for 11-13 minutes @ 350 degrees

 For the Cream Cheese Filling:

3/4 cup of Powdered Sugar
8 oz of Cream Cheese
3/4 cup of Cool Whip

Mix all together and put in a ziplock baggie so you can squeeze the frosting into the cake cups.

They are super easy and taste yummy. Win Win in my book!
